Strawberry Festival!

Thursday, June 17th, 2010

img_2896img_2890img_2895img_2889What a great success the Strawberry Festival was!  Check out these great pictures, and try out Lorraine’s Winning Strawberry Recipe! Strawberry Nut Bread with Strawberry Cream Cheese!

Strawberry Nut Bread
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3 teaspoons ground cinnamon
2 cups sugar
2 cups sliced fresh strawberries
4 eggs
1 1/4 cups vegetable oil
1 cup chopped walnuts

Preheat oven to 350 degrees F. Lightly grease 2 9×5 inch loaf pans.

Sift together the flour, baking soda, salt, ground cinnamon and sugar in a large mixing bowl. Make a well in the center. Beat together the eggs and oil and pour them into the well. Stir just enough to moisten the ingredients. Fold in the nuts and strawberries. Pour mixture into prepared pans, no more than half full.
Bake about 60 minutes or until a toothpick inserted in the center comes out clean. Cool 20 to 30 minutes before removing from pans. Move to a rack to cool completely before slicing.

Strawberry Cream Cheese Spread

1 (8-ounce) package cream cheese, softened
2 tablespoons confectioners’ sugar
1 cup fresh strawberries, hulled
In a blender or food processor combine the cream cheese, confectioners’ sugar and strawberries. Pulse until smooth and well blended. Use immediately or refrigerate until needed.

I used low fat cream cheese and doubled the amount, cut back on the sugar and (alas I was running low) the strawberries. I simply mashed it up with a potato masher.
